Yes. Fully fermented kimchi kept refrigerated is safe to eat during pregnancy, and it does not appear on the FDA's list of foods pregnant people should avoid. That list, in the agency's Listeria guidance for expecting parents, names six things: hot dogs and deli meats unless reheated until steaming, unpasteurized milk, cheeses made with unpasteurized milk, queso fresco-type cheeses, refrigerated pâtés and meat spreads, and refrigerated smoked seafood. The check to make before you buy
A refrigerated kimchi and a shelf-stable jar of pickled vegetables are governed by two different rules in the 2022 FDA Food Code, and the case is the only visible evidence of which one applied.
The Food Code decides whether a food needs temperature control using two tables. Table B covers food that was not heat-treated, which is what refrigerated kimchi is; at the water activity of a wet vegetable ferment, above 0.92, it clears the bar only below pH 4.2, and between 4.2 and 4.6 the manufacturer owes a product assessment. Table A covers food heat-treated to destroy vegetative cells and then packaged, where pH of 4.6 or less clears it at any water activity because a validated heat step already did the work.
The raw jar therefore has further to travel on fermentation alone. Here is the order to check things in, since the first answer changes how you read the rest:
- Find the case. Refrigerated means raw and still fermenting. An ambient shelf means a heat step or an added-acid process stands behind it.
- Read the storage line. "Keep refrigerated" on a raw product means the cold chain is part of the safety design, not a note about crunch.
- Read sodium against the serving size on the Nutrition Facts panel, which for kimchi is 1 ounce.
- Search the brand on FDA's recall list before buying a large jar.
Canada's national fermented-foods guidance, from the BC Centre for Disease Control, states the baseline plainly: kimchi is typically served raw, without heat treatment or pasteurization.
How much sodium is in a serving of kimchi?
FDA sets the reference amount for "pickles and pickled vegetables, all types" at 30 grams in 21 CFR 101.12, and the guidance listing examples for each category names kimchi outright. Labels convert that to a 1-ounce (28 g) serving.
USDA's FoodData Central entry for "Cabbage, kimchi" (FDC ID 170392) reports 498 mg of sodium per 100 g, about 139 mg in a 1-ounce serving. Real labels spread much wider. FoodData Central's branded database lists 81 kimchi products under "Pickles, Olives, Peppers & Relishes," running from 193 to 1,290 mg per 100 g, median 679. At the 30 g reference amount that is 58 mg low, roughly 204 mg median, 387 mg high.
The FDA Daily Value for sodium in 21 CFR 101.9 is 2,300 mg, and the separate column for pregnant and lactating women is also 2,300 mg. Pregnancy does not lower it. A median serving is about 9 percent of the day's sodium; the saltiest product in that set, about 17 percent.
Portion does more work here than brand. The Codex standard for kimchi (CXS 223-2001) permits salt from 1.0 to 4.0 percent by mass, and the BC CDC guidance reports Korean adults eating 50 to 200 g a day. At the median, that range is 340 to 1,360 mg, the difference between a rounding error and half your allowance.
What fermentation does to Listeria, and where it stops
Kimchi starts near pH 5.8 and has to come down. The BC CDC timetable is entirely a function of temperature: pH falls to roughly 4.6 or lower in 2 days at 20°C (68°F), 6 days at 10°C (50°F), 15 days at 5°C (41°F), and 35 days at 0°C (32°F). Final salt in its process flow chart lands at 1.6 to 1.8 percent.
FDA's hazard-analysis guidance for human food tabulates the growth limits for Listeria monocytogenes: minimum pH 4.4, minimum temperature 31.3°F (−0.4°C). The temperature figure is why this organism gets its own advisory; a 40°F refrigerator does not stop it. The pH figure is why ripe kimchi is not a growth medium.
Growth stopping is not the same as dying. Inatsu and colleagues, publishing in the Journal of Food Protection in 2004, inoculated commercial and laboratory-prepared kimchi at 5 to 6 log CFU/g and held it at 10°C. All four pathogens tested survived a full week. L. monocytogenes took 16 days in the commercial product and 20 days in the laboratory-prepared one to fall to the minimum detectable level. E. coli O157:H7 stayed high for the entire 24-day run. They judged that contamination at any stage of production or marketing could pose a risk.
That is why the BC CDC flow chart treats a two-week hold under refrigeration after the pH drop as a control point, not a flavor preference. The acid does the killing, and it is slow.
What the use-by date on a kimchi jar means
Less than most people assume. USDA's Food Safety and Inspection Service is direct about it: "A 'Use-By' date is the last date recommended for the use of the product while at peak quality. It is not a safety date except for when used on infant formula." Except for infant formula, product dating is not required by federal regulation at all.
The seven-day rule people half-remember comes from elsewhere. Food Code 3-501.17 requires that refrigerated ready-to-eat food needing temperature control be marked when the original container is opened and used within a maximum of seven days at 41°F, counting the opening day as Day 1. Kimchi that genuinely sits below pH 4.2 falls outside that clock. Commercial producers generally print best-before dates around two months out, and BC CDC notes that once kimchi has fermented to pH 4.6 or lower, pathogens will not multiply in it.
What still matters after opening is temperature and submersion. FDA's Listeria page for pregnancy asks for a refrigerator at 40°F (4°C) or colder; the BC CDC flow chart specifies storage at 4°C or lower. Keep the vegetables under the brine and expect it to get sourer. Sour is the fermentation continuing. Surface mold means the jar goes out.

Acidified foods under 21 CFR 114.3 are low-acid foods with added acid, water activity above 0.85, and a finished equilibrium pH of 4.6 or below; they require a scheduled process filed with FDA. Fermented foods sit outside that rule because their acid is produced in place by bacteria rather than poured in.
For a home batch, the only unknown is the one you cannot taste. University of Georgia Extension describes 48 hours loosely covered at room temperature, a tangier flavor by days 5 to 7, and roughly two weeks before the environment is acidic enough, below pH 4.6, to inhibit most foodborne pathogens. The BC CDC critical limit is tighter: at 18 to 22°C the pH should reach 4.6 or lower within two days, and a batch that has not by day three should be discarded. The 2021 kimchi recall started in a drain, not in a jar
In July 2021, 5000 Years Foods of Chicago recalled its cabbage kimchi across 16, 32, 64 and 128 oz glass jars and 5-gallon tubs. The trigger, in the company's own words in the FDA notice, was that FDA sampling found Listeria monocytogenes in the production facility. No illnesses were reported.
The organism was found in the building. I used to do that sampling for a living: for a sanitation contractor working dairy plants, I swabbed floor drains, door gaskets and the undersides of conveyor belts, filled the bottles, and shipped them to a laboratory I never saw. A positive drain does not mean the product is contaminated. It means the organism has found somewhere to live in that building, and everything that follows, including a recall of product that never itself tested positive, is written for the building rather than the food.
That is why a plant's cleaning schedule looks bizarre from outside: it targets harborage sites, not the surfaces people imagine are dirty. Recalls are the visible output of a monitoring program you will never see, which makes checking a brand against FDA's recall list an informative thirty seconds. The BC CDC recall table logs a different failure mode: an Australian kimchi recall in 2020 for insufficient salt content, a failure at the fermentation step rather than the sanitation one.
